  • 2 medium delicata squash (about 2 pounds total)
  • 3 tablespoons olive oil
  • 3 tablespoons pure maple syrup
  • 1 teaspoon ground cinnamon
  • ½ teaspoon fine sea salt
  • ¼ teaspoon black pepper
  • ½ cup pecan halves
  • 1 tablespoon maple syrup (for pecans)
  • ¼ teaspoon ground cinnamon (for pecans)
  • Pinch of salt (for pecans)
  • Fresh thyme or rosemary sprigs (optional garnish)
  • Crumbled feta or goat cheese (optional garnish)
  • Drizzle of balsamic glaze (optional garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Wash delicata squash thoroughly. Trim off both ends, cut in half lengthwise, and scoop out seeds. Slice into ½-inch thick half-moons.
  3. In a large bowl, whisk together olive oil, 3 tablespoons maple syrup, 1 teaspoon cinnamon, salt, and pepper. Add squash and toss to coat.
  4. Spread squash in a single layer on the prepared baking sheet, ensuring pieces do not overlap.
  5. Roast for 15 minutes.
  6. Meanwhile, in a small bowl, combine pecan halves, 1 tablespoon maple syrup, ¼ teaspoon cinnamon, and a pinch of salt. Stir to coat.
  7. After 15 minutes, remove baking sheet from oven. Flip squash pieces. Sprinkle coated pecans evenly over the squash.
  8. Return to oven and roast for another 10-15 minutes, until squash is tender and pecans are fragrant and golden.
  9. Remove from oven and let cool on the pan for 5 minutes. Transfer to a serving platter, garnish as desired, and serve warm.

Notes

For extra crispy edges, roast at 425°F for 20-25 minutes without flipping, or broil for the last 2-3 minutes. Watch pecans closely as they can burn quickly. Leftovers keep in the fridge for up to 4 days; reheat in a 350°F oven for 5-7 minutes. Not recommended for freezing.
