  • 1 3/4 cups all-purpose flour (220g)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup chopped walnuts or chocolate chips

Instructions

  1. Brown the butter: In a small saucepan over medium heat, melt 6 tablespoons of unsalted butter. Stir frequently as it foams and starts to brown, about 4-5 minutes. Remove from heat and set aside to cool slightly.
  2. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  3. Mash the bananas in a large bowl until mostly smooth but still a bit chunky.
  4. Add the browned butter (warm, not hot), honey, brown sugar, eggs, and vanilla extract to the mashed bananas. Whisk or stir gently until combined without overmixing.
  5. In a separate bowl, whisk together the flour, baking soda, and salt.
  6. Fold the dry ingredients into the wet mixture in batches, folding gently with a spatula until just combined.
  7. If using, gently fold in the chopped walnuts or chocolate chips.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Tent with foil halfway through if the top browns too quickly.
  10. Cool the bread in the pan for 10-15 minutes, then transfer to a cooling rack to cool completely before slicing.
