  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 3/4 cup (150g) packed brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Instructions

  1. Mash the ripe bananas in a large mixing bowl until mostly smooth with a few small lumps remaining.
  2. Add the vegetable oil, eggs, and vanilla extract to the bananas. Whisk vigorously for about 30 seconds until well combined and slightly frothy.
  3. Sprinkle the brown sugar, baking soda, baking powder, salt, and cinnamon over the wet mixture. Let it sit for a moment.
  4. Gently fold the dry ingredients into the wet mixture using a whisk or spoon. Stop mixing as soon as no streaks of flour remain; the batter should be thick and lumpy. Do not overmix.
  5. Let the batter rest in the bowl for 5 minutes to allow the flour to hydrate.
  6. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.
  7. Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use very ripe bananas with black peels for maximum sweetness and moisture. Do not overmix the batter to avoid a tough texture. If the top browns too quickly, tent with foil after 30 minutes. For best results, let the bread cool completely before slicing to prevent a gummy center.
