Perfect Grilled Peach and Burrata Salad with Prosciutto

A quick and elegant summer salad combining smoky grilled peaches, creamy burrata, and salty prosciutto, finished with fresh basil and balsamic glaze.

  • 4 medium fresh peaches, ripe but firm
  • 8 oz (225g) burrata cheese, fresh and creamy
  • 6 oz (170g) prosciutto, thinly sliced
  • 1/2 cup fresh basil leaves, loosely packed
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic glaze
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon freshly squeezed lemon juice

Instructions

  1. Preheat your grill or grill pan to medium-high heat, about 400°F (200°C), for 5 minutes.
  2. Wash and dry peaches. Slice each peach in half and remove the pit. Cut each half into 2-3 wedges for uniform grilling.
  3. Brush each peach wedge lightly with olive oil to prevent sticking and encourage caramelization.
  4. Place peach wedges skin-side down on the grill. Grill for 3-4 minutes per side until grill marks appear and peaches soften without falling apart. Use tongs to flip carefully.
  5. While peaches grill, tear prosciutto into bite-sized strips and loosely chop basil leaves.
  6. Arrange grilled peaches on a serving platter. Tear burrata into chunks and scatter over the peaches. Add prosciutto strips and sprinkle fresh basil on top.
  7. Drizzle olive oil, balsamic glaze, and lemon juice evenly over the salad. Season with sea salt and freshly ground black pepper to taste.
  8. Let the salad sit at room temperature for 5 minutes before serving to allow flavors to mingle.

Notes

Use ripe but firm peaches to avoid mushy texture. Let burrata sit at room temperature 15 minutes before assembling for best creaminess. If no grill pan, a hot cast-iron skillet with ridges can be used. Season at the end to prevent watery salad. Balsamic glaze can be store-bought or homemade.
