  • 2 thin store-bought flatbreads (naan or pita work well)
  • 2 cups shredded cooked rotisserie chicken or leftover grilled chicken breast
  • 1/2 cup BBQ sauce (smoky, slightly sweet variety recommended)
  • 1/4 cup thinly sliced red onion
  • 1 to 1 1/2 cups shredded mozzarella cheese (fresh or pre-shredded)
  • A handful of fresh cilantro, roughly chopped
  • 1 tablespoon olive oil for brushing flatbread
  • Optional: sliced jalapeños for heat
  • Optional: drizzle of ranch dressing for serving

Instructions

  1. Preheat the oven to 425°F (220°C) and let it heat fully, about 10 minutes.
  2. In a medium skillet over medium heat, warm 2 cups of shredded cooked chicken with 1/2 cup BBQ sauce. Stir frequently until the sauce thickens slightly and coats the chicken evenly, about 5 minutes. Add a splash of water if sauce gets too thick.
  3. Place flatbreads on a baking sheet and brush each lightly with 1 tablespoon olive oil to help crisp the crust.
  4. Spread the BBQ chicken mixture evenly over each flatbread, leaving a small border around the edges.
  5. Scatter thin slices of red onion on top, then generously sprinkle 1 to 1 1/2 cups shredded mozzarella cheese over everything.
  6. Bake in the preheated oven for 8 to 10 minutes, or until the cheese is melted, bubbly, and starting to turn golden. Check around 7-8 minutes to avoid burning.
  7. Remove from oven and immediately sprinkle with chopped fresh cilantro. Add sliced jalapeños or a drizzle of ranch dressing if desired.
  8. Let the flatbread pizzas cool for 2-3 minutes before slicing to help the cheese set.

Use thin flatbreads for best crispiness. Brush flatbread with olive oil before baking to avoid sogginess. Warm chicken in BBQ sauce before assembling to lock in flavor. Avoid overloading toppings to keep crust crispy. If flatbread is thick, toast the bottom for 2 minutes before adding toppings.
