  • 1/4 cup crumbled feta cheese (optional)
  • 1/2 cup plain Greek yogurt (or dairy-free yogurt alternative)
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried)
  • 1 teaspoon lemon juice
  • Salt and pepper, to taste

Instructions

  1. Marinate the chicken: In a medium bowl, whisk together olive oil, minced garlic, lemon juice, oregano, salt, and pepper. Add chicken strips and toss until evenly coated. Let sit while prepping veggies (5 minutes; 10-15 minutes if possible).
  2. Prepare the base: If rice or quinoa is uncooked, start cooking it first. Chop cucumber, halve cherry tomatoes, slice olives and red onion, and crumble feta. Set aside.
  3. Cook the chicken: Heat skillet over medium-high heat. Add marinated chicken in a single layer (work in batches if needed). Cook 2-3 minutes per side until golden brown and cooked through (internal temp 165°F).
  4. Make the sauce: Mix Greek yogurt, lemon juice, dill, salt, and pepper in a small bowl. Adjust seasoning to taste.
  5. Assemble the bowls: Spoon rice or quinoa into bowls. Top with cooked chicken, fresh veggies, olives, and feta. Drizzle yogurt sauce on top or serve on the side.
