  • 3 tablespoons honey
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce (low-sodium preferred)
  • 1 tablespoon rice vinegar
  • 2 tablespoons olive oil
  • Freshly ground black pepper, to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 green onions, thinly sliced for garnish
  • 1 teaspoon toasted sesame seeds (optional)

Instructions

  1. Slice 1 pound of boneless pork chops into 1-inch thick medallions. Pat dry with paper towels and season lightly with freshly ground black pepper.
  2. In a small bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, and red pepper flakes if using. Set aside.
  3. Heat olive oil in a large skillet over medium-high heat until shimmering but not smoking, about 1-2 minutes.
  4. Add pork medallions in a single layer without crowding. Cook for about 3 minutes on one side until golden brown and caramelized. Flip and cook another 2-3 minutes until pork reaches 145°F (63°C). Remove pork from skillet and set aside.
  5. Reduce heat to medium-low. Pour the honey garlic sauce mixture into the skillet and scrape up browned bits. Let simmer gently for 2-3 minutes until slightly thickened and glossy.
  6. Return pork medallions to the skillet and spoon sauce over them. Cook for another 1-2 minutes, turning to coat well with the sticky glaze.
  7. Remove from heat and garnish with sliced green onions and toasted sesame seeds if desired. Serve immediately.

Notes

Dry pork before searing for a better crust. Add garlic in the sauce after searing to avoid burning. If sauce thickens too much, add a teaspoon of water to loosen it. Use a meat thermometer to ensure pork reaches 145°F (63°C).
