  • 1 pound large shrimp, peeled and deveined
  • 2 medium zucchinis, sliced into half-moons
  • 4 cloves garlic, minced
  • 3 tablespoons honey
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley or green onions for garnish

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels. Slice the zucchini into half-moons about 1/4 inch thick. Mince the garlic cloves finely. Set aside.
  2. In a small bowl, whisk together honey, soy sauce, lemon juice, and red pepper flakes (if using).
  3. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add shrimp in a single layer and cook 2-3 minutes per side until pink and opaque. Remove shrimp and set aside.
  4. Add remaining tablespoon olive oil to skillet. Sauté zucchini slices for 4-5 minutes until tender but still slightly crisp. Season with salt and pepper.
  5. Push zucchini to one side of the pan. Add minced garlic to cleared space and stir for about 30 seconds until fragrant, being careful not to burn it.
  6. Pour honey soy sauce mixture into skillet, stirring to coat garlic and zucchini evenly.
  7. Return shrimp to skillet and toss gently to coat with sauce. Cook together for 1-2 minutes until sauce thickens slightly.
  8. Remove from heat and garnish with chopped parsley or sliced green onions. Serve immediately.

Notes

If sauce is too thick, add a splash of water or broth to loosen. Avoid overcrowding shrimp to ensure proper searing. For gluten-free, substitute soy sauce with tamari or coconut aminos. Adjust garlic amount to taste but avoid burning. Cook shrimp just until pink to prevent rubberiness. Can be served over rice or with bread to soak up sauce.
