  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons oyster sauce (optional)
  • 1 tablespoon brown sugar or honey
  • 1 teaspoon fresh ginger, finely minced
  • 2 cloves garlic, minced
  • 1/4 cup beef broth or water
  • 1 teaspoon cornstarch mixed with 2 tablespoons cold water (cornstarch slurry)
  • 3 cups broccoli florets, washed and trimmed
  • Optional: sliced bell peppers or carrots
  • Toasted sesame seeds (for garnish)
  • Thinly sliced green onions (for garnish)
  • 1 tablespoon vegetable or canola oil (for cooking)

Instructions

  1. Thinly slice the beef against the grain into 1/4-inch thick strips. Trim and wash broccoli florets, cutting larger pieces into bite-sized pieces. Mince garlic and ginger finely.
  2. In a medium bowl, combine sliced beef with 2 teaspoons soy sauce, 1 teaspoon cornstarch, and 1 teaspoon sesame oil. Toss to coat evenly and let rest for 5 minutes.
  3. In a small bowl, whisk together 1/4 cup low-sodium soy sauce, 2 tablespoons oyster sauce, 1 tablespoon brown sugar or honey, minced ginger, minced garlic, and 1/4 cup beef broth or water. Set aside.
  4. Heat wok or large skillet over medium-high heat for about 2 minutes until hot. Add 1 tablespoon vegetable or canola oil and swirl to coat.
  5. Add marinated beef in a single layer. Let sear without moving for 1-2 minutes to form a crust, then stir-fry for about 3 more minutes until mostly cooked. Remove beef and set aside.
  6. Add more oil if needed, then stir-fry broccoli florets for 3-4 minutes until bright green and crisp-tender. Optionally add a splash of water and cover for 1-2 minutes to steam.
  7. Return beef to pan with broccoli. Stir the sauce and add the cornstarch slurry, then pour over beef and broccoli. Toss quickly and cook for 1-2 minutes until sauce thickens and coats ingredients.
  8. Remove from heat and garnish with toasted sesame seeds and sliced green onions. Serve hot over steamed rice, noodles, or cauliflower rice.

Slice beef thinly against the grain to keep it tender. Avoid overcrowding the pan to ensure proper searing. Use neutral oils like canola or vegetable oil for high heat. Watch garlic carefully to prevent burning. Adjust sauce thickness with cornstarch slurry or broth as needed. Marinate beef for at least 5 minutes for better flavor and texture.
