These quick sheet pan chicken fajitas are a lifesaver for busy weeknights. With just 20 minutes and one pan, you can have a vibrant, sizzling meal that tastes like you put in way more effort than you actually did.

  • 1 ½ pounds boneless, skinless chicken breasts, sliced into ½-inch strips
  • 3 bell peppers (any color), sliced into ¼-inch strips
  • 1 large red onion, sliced into ¼-inch half-moons
  • 3 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 ½ teaspoons ground cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Pinch of cayenne pepper (optional)
  • 8–10 small flour or corn tortillas, warmed
  • Optional toppings: sour cream, salsa, avocado, shredded lettuce, cheese, cilantro, lime wedges

Instructions

  1. Preheat your oven to 450°F (230°C). Line a large rimmed sheet pan with parchment paper or aluminum foil.
  2. In a small bowl, combine chili powder, cumin, garlic powder, smoked paprika, oregano, salt, black pepper, and cayenne (if using).
  3. Pat the chicken breasts dry with paper towels, then slice into ½-inch strips against the grain.
  4. Slice bell peppers into ¼-inch strips and red onion into ¼-inch half-moons.
  5. In a large bowl, combine chicken, peppers, and onion. Drizzle with olive oil and sprinkle with the seasoning mixture. Toss until everything is evenly coated.
  6. Spread the chicken and vegetables in a single layer on the prepared sheet pan. Do not overcrowd.
  7. Roast for 15-18 minutes, stirring halfway through, until chicken reaches an internal temperature of 165°F (74°C) and vegetables are tender with slightly charred edges.
  8. Remove from oven and let rest for 2-3 minutes. Warm tortillas and serve the fajita mixture with desired toppings.

Notes

Pat chicken dry for better browning. Cut ingredients uniformly for even cooking. Do not overcrowd the pan to ensure proper roasting. Let the fajita mixture rest before serving to keep chicken juicy.
