  • ½ cup granulated sugar
  • ½ cup fresh lime juice (about 45 limes)
  • 1 cup water
  • ½ cup tequila blanco
  • 1 teaspoon fresh lime zest
  • Pinch of salt
  • Optional: mint leaves for garnish or blending
  • Optional: splash of club soda for fizz

Instructions

  1. Make the simple syrup by combining ½ cup granulated sugar and 1 cup water in a small saucepan. Heat over medium, stirring until sugar dissolves completely, about 5 minutes. Remove from heat and let cool to room temperature.
  2. Pit about 2 cups of fresh or frozen cherries and place them in a blender.
  3. Add the cooled simple syrup, ½ cup fresh lime juice, 1 teaspoon lime zest, and a pinch of salt to the blender.
  4. Blend the mixture until smooth but still slightly textured, about 1-2 minutes. If using mint, add a handful of fresh leaves and pulse a few times.
  5. Pour in ½ cup tequila blanco and gently stir it in with a spoon, avoiding over-blending.
  6. Taste and adjust sweetness or tartness by adding more simple syrup or lime juice if needed.
  7. Pour the mixture into silicone popsicle molds, leaving a little space at the top for expansion. Insert sticks.
  8. Freeze the molds for at least 6 hours or overnight until firm.
  9. To unmold, run warm water briefly over the outside of the molds for 10-15 seconds and gently pull out the popsicles.

Notes

Do not rush freezing; popsicles need at least 6 hours due to alcohol content. Use fresh lime juice for best flavor. To unmold easily, run warm water over molds briefly. Adjust tequila amount if popsicles are too soft. Optional club soda can lighten texture.
