These popsicles combine sweet watermelon, fresh mint, and lime juice for a cool, refreshing summer treat with an optional mojito twist.

  • 4 cups seedless watermelon, cubed
  • 1/4 cup fresh mint leaves, packed
  • 1/4 cup freshly squeezed lime juice (about 23 limes)
  • 2 tablespoons granulated sugar (or honey/agave syrup as a natural alternative)
  • 2 tablespoons white rum (optional)

Instructions

  1. Cut about 4 cups (around 600 grams) of seedless watermelon into cubes and remove any seeds.
  2. Place watermelon cubes in a blender or food processor. Add 1/4 cup fresh lime juice, 1/4 cup packed fresh mint leaves, and 2 tablespoons sugar.
  3. Blend on high for 1-2 minutes until smooth and vibrant pink, ensuring a silky texture without chunks of mint leaves.
  4. Add 2 tablespoons white rum if using, and pulse a few times to combine. If skipping alcohol, add an extra teaspoon of lime juice.
  5. Taste and adjust sweetness by adding more sugar if desired, then blend briefly again.
  6. Pour mixture into popsicle molds, leaving about 1/4 inch space at the top. Insert sticks and freeze for at least 4 hours or overnight.
  7. To unmold, run warm water over the outside of the molds for 10-15 seconds and gently pull on the sticks before serving.

Notes

For smoother popsicles, strain the blended mixture through a fine sieve before freezing. Use fresh lime juice for best flavor. Do not over-blend mint to avoid bitterness. Freeze for at least 4 hours for proper texture. To re-soften, leave at room temperature for 5 minutes or run briefly under warm water.
