  • 2 tablespoons brown sugar (packed)
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 tablespoon unsalted butter
  • 2 large sweet potatoes, peeled and cut into 1-inch cubes

  • 1 teaspoon ground cinnamon (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the cubed sweet potatoes with 2 tablespoons olive oil, cinnamon, salt, and pepper in a bowl. Spread them evenly on a parchment-lined baking sheet.
  3. Roast sweet potatoes for about 25-30 minutes, turning halfway through, until tender and golden brown on the edges.
  4. Pat dry the pork chops with paper towels. Season generously with salt, pepper, and smoked paprika on both sides.
  5. Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Once shimmering, add the pork chops and sear for 3-4 minutes per side until golden-brown crust forms. Do this in batches if necessary.
  6. Transfer the skillet with pork chops to the preheated oven. Roast for about 6-8 minutes, until internal temperature reaches 145°F (63°C).
  7. While pork chops and sweet potatoes cook, combine apple cider, apple cider vinegar, brown sugar, Dijon mustard, and minced garlic in a medium saucepan over medium heat.
  8. Bring to a simmer and reduce until thickened to a syrupy consistency, about 10-12 minutes, stirring occasionally.
  9. Remove from heat and whisk in 1 tablespoon unsalted butter until glossy. Adjust seasoning if needed.
  10. Transfer pork chops to a plate and let rest for 5 minutes.
  11. Drizzle the warm apple cider glaze generously over the pork chops and serve alongside roasted sweet potatoes. Garnish with fresh thyme or parsley if desired.

If glaze becomes too thick, add a splash of water or more apple cider to loosen it. Use a meat thermometer to avoid overcooking pork chops. Rest meat before slicing to keep it juicy. Substitute honey for brown sugar or coconut oil for butter for dairy-free options. Roasted butternut squash can replace sweet potatoes seasonally.
