Savory Beer Braised Bratwurst with Sweet Onions

A quick and easy 30-minute dinner featuring bratwurst braised in lager with sweet onions, mustard, and spices for a rich, savory sauce without the fuss of traditional searing.

  • 4 to 6 links fresh pork bratwurst
  • 2 large sweet onions (yellow or Vidalia), thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil or vegetable oil
  • 12 ounces lager or pilsner beer
  • 1 tablespoon whole grain mustard
  • 1 dried bay leaf
  • 1 teaspoon whole black peppercorns

Instructions

  1. Peel and slice onions into thin half-moons; mince garlic.
  2. Heat olive oil and butter in a large heavy-bottomed skillet or Dutch oven over medium-high heat until butter sizzles.
  3. Add sliced onions and cook for 5 minutes until softened and translucent.
  4. Place bratwurst links directly on top of the onions.
  5. Pour in beer, ensuring it comes halfway up the sausages; add mustard, bay leaf, and peppercorns.
  6. Reduce heat to medium-low, cover, and simmer for 15 minutes.
  7. Remove lid, increase heat to medium, and reduce liquid until it becomes a thick, glossy sauce.
  8. Stir in minced garlic and cook for 1 minute.
  9. Remove bay leaf and serve brats topped with onions and sauce.

Notes

Do not prick the bratwurst casings to retain juices. Ensure a gentle simmer rather than a rolling boil to prevent bursting. If avoiding alcohol, substitute beer with low-sodium beef broth and a splash of apple cider vinegar. Internal temperature should reach 160°F (71°C).
