  • 1 large egg
  • 2 cloves garlic, minced

  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 can (13.8 oz) refrigerated pizza dough
  • 1/2 cup marinara sauce
  • 8 ounces mozzarella cheese, cut into 1/2-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • Yellow mustard (for eyes)
  • Dijon mustard (optional, for eyes)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, oregano, salt, pepper, and parsley. Mix gently with your hands until just combined.
  3. Using a cookie scoop or your hands, form the mixture into 16 to 18 meatballs, about 1.5 inches in diameter. Place them on the prepared baking sheet, spacing them about an inch apart.
  4. Bake the meatballs for 12 to 14 minutes, until browned on the outside and cooked through (internal temperature of 160°F/71°C). Remove from the oven and let cool for about 5 minutes.
  5. While the meatballs are cooling, unroll the pizza dough onto a clean work surface. Cut the dough into long strips about 1/2 inch wide.
  6. Take a meatball and press a cube of mozzarella into the center. Wrap 3 to 4 dough strips around the meatball like mummy gauze, leaving a small gap at the top for the eyes. Press the ends gently to seal.
  7. Place the wrapped mummies on the baking sheet about 2 inches apart.
  8. In a small bowl, mix the olive oil and garlic powder. Brush this mixture over the dough strips.
  9. Bake for 10 to 12 minutes, until the dough is golden brown and puffed.
  10. Remove from the oven and let cool for 2 minutes. Using a toothpick or knife tip, dab two small dots of mustard on the exposed gap for eyes.
  11. Sprinkle with dried parsley. Serve warm with marinara sauce for dipping.

Notes

Don’t overmix the meatball mixture to keep them tender. Let meatballs cool before wrapping to prevent soggy dough. Use low-moisture mozzarella to avoid excess liquid. For make-ahead, assemble up to 24 hours in advance and refrigerate; add 2-3 minutes to baking time. For gluten-free, use gluten-free breadcrumbs and pizza dough. For dairy-free, skip Parmesan and use dairy-free mozzarella.
