Ingredients

Scale
  • 2 ½ cups all-purpose flour (spooned and leveled)
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 1 tablespoon vanilla extract (pure)
  • 1 ¼ cups whole milk, room temperature
  • 1 ½ cups unsalted butter, softened (for frosting)
  • 5 cups powdered sugar, sifted
  • 2 teaspoons vanilla extract (for frosting)
  • 34 tablespoons heavy cream (for frosting)
  • Black gel food coloring (about 2 teaspoons)
  • ½ cup dark chocolate chips (70% cocoa)
  • ½ cup heavy cream (for drip)
  • 1 tablespoon unsalted butter (for drip)
  • Edible gold stars (various sizes)
  • Edible gold luster dust
  • Clear vanilla extract or vodka (to mix with luster dust)
  • Small paintbrush
  • Toothpicks

Instructions

  1. Preheat oven to 350°F (175°C). Grease three 8-inch round cake pans and line bottoms with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat butter and sugar until light and fluffy, about 3-4 minutes.
  4. Add eggs one at a time, beating well after each. Stir in vanilla extract.
  5. Add flour mixture in three additions, alternating with milk, starting and ending with flour. Mix until just combined.
  6. Divide batter evenly among pans. Bake for 25-28 minutes, until a toothpick inserted in center comes out clean. Cool in pans for 10 minutes, then transfer to wire rack to cool completely.
  7. For buttercream: Beat softened butter until creamy. Gradually add powdered sugar, then vanilla and heavy cream. Add black gel food coloring slowly, beating on high for 2 minutes until fluffy.
  8. Level cooled cake layers with a serrated knife. Place one layer on cake board, add a generous layer of black buttercream, repeat. Apply thin crumb coat and chill for 30 minutes.
  9. Apply a thick final layer of black buttercream, smoothing with an offset spatula.
  10. For chocolate drip: Heat heavy cream until just simmering. Pour over chocolate chips, let sit 2 minutes, add butter, and stir until smooth. Cool for 10 minutes until thick but pourable.
  11. Using a piping bag, drip chocolate around the edge of the chilled cake. Fill in top center and spread evenly. Chill for 15 minutes.
  12. Using a toothpick, lightly sketch the Virgo constellation pattern on top of the cake. Place edible gold stars at each point. Mix gold luster dust with clear vanilla to make paint, then connect stars with thin gold lines.

Notes

Room temperature ingredients are crucial for best texture. Chill frosted cake for exactly 30 minutes before adding drip. Test drip consistency on a glass first. Black food coloring can taste bitter; let frosting sit overnight to mellow. Use a toothpick to sketch constellation before placing stars.
