Instructions

  1. Trim off any overly thick fat caps from the brisket point, leaving about 1/4 inch of fat. Cut the brisket into 1 to 1.5-inch cubes for even cooking. This takes about 10 minutes.
  2. In a mixing bowl, combine brown sugar, paprika, garlic powder, onion powder, chili powder, kosher salt, and black pepper. Stir to blend evenly. Rub the mixture generously over every piece of brisket. Let rest for 20 minutes if time allows.
  3. Preheat oven to 275°F (135°C). Arrange the seasoned brisket cubes in a single layer in an oven-safe roasting pan. Drizzle liquid smoke over the top if using. Cover tightly with aluminum foil.
