  • 1 cup walnuts (toasted)
  • 2 pears (Anjou or Bosc), sliced
  • 1 cup grapes
  • 1/4 cup honey
  • 1 tablespoon extra virgin olive oil
  • Fresh rosemary or thyme sprigs
  • Crackers (water crackers, seeded crackers, or gluten-free alternatives)
  • Dried fruit (figs or apricots, optional)

Instructions

  1. Remove the brie from the fridge and let it sit at room temperature for 30 minutes before serving to enhance flavor and texture.
  2. Place the whole wheel of brie in the center of a large platter or board as the anchor point.
  3. Wash and slice the pears into thin wedges or cubes, keeping the skin on. Arrange the fruit around the cheese.
  4. Toast walnuts in a dry pan over medium heat for 3-5 minutes until fragrant, then let them cool completely.
  5. Scatter the toasted walnuts and any dried fruit around the board to fill empty spaces.
  6. Lean crackers against the cheese wheel or arrange them in a fan shape on one side of the board.
  7. Tuck sprigs of fresh rosemary or thyme into the gaps for color and aroma.
  8. Drizzle honey generously over the cheese and some of the fruit.
  9. Add a light drizzle of extra virgin olive oil over the cheese.
  10. Let the board sit for 10-15 minutes to allow flavors to meld before serving.
