  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon garlic powder
  • 1/3 cup honey (about 110 grams)
  • 1/4 cup low-sodium soy sauce (60 ml)
  • 4 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon sesame seeds, toasted
  • 2 green onions, sliced

Instructions

  1. Preheat your oven to 425°F (218°C). Line a baking sheet with aluminum foil and place a wire rack on top. Spray the rack with non-stick cooking spray.
  2. If using whole wings, separate the drumettes from the wingettes at the joint using kitchen shears or a sharp knife. Discard the wing tips or save for stock. Pat the wings dry thoroughly with paper towels.
  3. In a large bowl, combine the baking powder, salt, black pepper, and garlic powder. Add the dried wings and toss until evenly coated.
  4. Arrange the wings in a single layer on the wire rack, leaving space between each piece. Bake for 30 minutes without opening the oven door.
  5. While the wings bake, make the glaze: In a small bowl, whisk together the honey, soy sauce, minced garlic, rice vinegar, sesame oil, cornstarch, and red pepper flakes (if using). Set aside.
  6. After 30 minutes, remove the wings from the oven. Use a pastry brush to generously coat each wing with the honey garlic glaze. Return to the oven and bake for another 10-15 minutes, until the glaze is bubbly and caramelized and the internal temperature reaches 165°F (74°C).
  7. Remove from the oven and let the wings rest on the rack for 5 minutes to allow the glaze to set. Transfer to a serving platter.
  8. Sprinkle with toasted sesame seeds and sliced green onions. Serve warm.

Notes

Don’t skip drying the wings thoroughly for crispy skin. Use a wire rack for best results; if unavailable, flip wings halfway through baking. Watch the glaze closely as honey burns easily. For extra caramelization, broil for 1-2 minutes at the end.
