A simple, forgiving, and delicious 5-ingredient dessert featuring tender apples and a golden, crunchy oat topping. Perfect for busy weeknights or potlucks.

  • 6–7 medium apples (mix of Granny Smith and Honeycrisp), peeled, cored, and sliced
  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon apple pie spice
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Peel, core, and slice apples into 1/4-inch thick slices. Place in a large bowl and toss with lemon juice.
  3. Add granulated sugar, brown sugar, cinnamon, apple pie spice, vanilla extract, and salt to the apples. Toss to coat and let sit for 10 minutes.
  4. Transfer the apple mixture to a 9×9 inch baking dish and spread evenly.
  5. In a separate bowl, combine oats, flour, brown sugar, granulated sugar, cinnamon, and salt.
  6. Cut the cold butter into the dry mixture using a fork or pastry cutter until it resembles coarse sand with pea-sized crumbs.
  7. Sprinkle the topping evenly over the apples and press down gently.
  8. Bake for 35-40 minutes until the topping is golden brown and the apples are tender.
  9. Let cool for 10-15 minutes before serving.

Notes

For a crispier topping, ensure butter is cold and do not over-mix. If apples are very tart, add more sugar. Let the crisp cool to allow juices to thicken. Can be stored in the fridge for up to 5 days or frozen for up to 3 months.
