These no-bake peanut butter energy balls are quick, easy, and packed with protein. Made with simple pantry ingredients, they’re perfect for meal prep, busy mornings, or a healthy snack that tastes like a treat.

  • 1/2 cup honey (or maple syrup for vegan)
  • 1 1/2 cups rolled oats (old-fashioned)
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1/3 cup dark chocolate chips (mini preferred)
  • 1/4 cup ground flaxseed
  • 1/2 teaspoon vanilla extract
  • Pinch of salt (if peanut butter is unsalted)

Instructions

  1. Line a baking sheet or large plate with parchment paper.
  2. In a large mixing bowl, combine peanut butter, honey, and vanilla extract. Stir until smooth and well combined.
  3. Add rolled oats, protein powder, ground flaxseed, and salt. Stir until all dry ingredients are fully incorporated and the dough starts to come together (about 1-2 minutes).
  4. Fold in dark chocolate chips gently until evenly distributed.
  5. Check consistency: dough should be thick, slightly sticky, and hold together when pressed. If too dry, add 1 tablespoon honey or a splash of milk. If too sticky, add 1-2 tablespoons oats.
  6. Optional: Chill dough in the fridge for 15-20 minutes for easier handling.
  7. Scoop about 1 tablespoon of dough and roll between palms to form smooth balls. Place on prepared baking sheet. Repeat until all dough is used (about 18-20 balls).
  8. Refrigerate the baking sheet for at least 30 minutes to firm up the balls.
  9. Transfer to an airtight container and store in the fridge. Enjoy immediately or after a few hours for best flavor.

Notes

For best texture, use room temperature peanut butter. If dough is too sticky, wet hands slightly when rolling. Chilling is essential for firm balls. These taste even better the next day as flavors meld.
