  • 1/4 cup light brown sugar (50g), packed
  • 1/4 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter (42g), cold and cut into small cubes

Instructions

  1. Preheat your oven to 350°F (175°C). Place a rack in the center position.
  2. Prepare the apples: Peel, core, and slice 2 medium apples into 1/4-inch thick slices. Place them in a medium mixing bowl.
  3. Toss the apples with the filling ingredients: Add 2 tablespoons granulated sugar, 1 tablespoon packed brown sugar, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg (if using), 1 tablespoon cornstarch, 1 tablespoon lemon juice, and a pinch of salt to the bowl. Gently toss until the apples are evenly coated. Let them sit for 5 minutes.
  4. Make the crisp topping: In a small bowl, combine 1/4 cup oats, 1/4 cup flour, 1/4 cup packed brown sugar, 1/4 teaspoon cinnamon, and a pinch of salt. Whisk to combine. Add the 3 tablespoons of cold, cubed butter. Use a pastry cutter, fork, or your fingers to work the butter into the dry ingredients until the mixture looks like coarse sand with some pea-sized butter lumps.
  5. Assemble the crisps: Divide the apple mixture evenly between two 8-ounce ramekins or a small baking dish. Sprinkle the topping evenly over the apples, pressing down gently.
  6. Bake: Place the ramekins on a baking sheet. Bake for 25-30 minutes, or until the topping is golden brown and the filling is bubbling around the edges. If the topping browns too quickly, tent loosely with foil for the last 5 minutes.
  7. Cool slightly and serve: Let the crisp rest on a wire rack for at least 10 minutes. Serve warm, preferably with vanilla ice cream or whipped cream.

For best results, use a mix of tart and sweet apples (e.g., Granny Smith and Honeycrisp). Keep the butter cold for a crumbly topping. Let the crisp rest for 10 minutes after baking to allow the filling to set. If you don’t have ramekins, a small loaf pan or cast-iron skillet works well.
