  • 3 cloves garlic, minced
  • ¼ cup all-purpose flour
  • 2 cups whole milk, warmed
  • 1 cup low-sodium chicken or vegetable broth
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
  • ¼ teaspoon freshly grated nutmeg
  • 1 teaspoon kosher salt, plus more to taste
  • ½ teaspoon black pepper, freshly ground
  • ¼ cup dry white wine (optional but recommended)
  • 1 ½ cups crispy fried onions
  • ½ cup panko breadcrumbs
  • 2 tablespoons melted butter
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Prepare the green beans: Bring a large pot of water to a rolling boil. Add 1 tablespoon kosher salt. Fill a large bowl with ice and cold water. Trim the ends of the green beans and cut into 2-inch pieces. Boil the beans for exactly 3 minutes until bright green and still firm. Drain and plunge into the ice water bath for 2 minutes. Drain well and pat dry. Set aside.
  2. Brown the mushrooms: In a large skillet, melt 2 tablespoons butter over medium-high heat. Add the sliced mushrooms in a single layer. Cook without stirring for 3-4 minutes until golden on one side, then stir and cook for another 3-4 minutes until deeply browned. Transfer to a plate and set aside.
  3. Build the sauce: Reduce heat to medium. Add the remaining 2 tablespoons butter to the skillet. Add the diced onion and cook for 4-5 minutes until softened. Add the minced garlic and cook for 30 seconds. If using white wine, pour it in and scrape up browned bits; simmer for 1 minute. Sprinkle the flour over the onions and stir constantly for 1-2 minutes.   5. Assemble the casserole: Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish. Add the blanched green beans to the skillet with the mushroom sauce and stir until coated. Pour into the prepared dish and spread evenly.
  6. Make the topping: In a small bowl, combine crispy fried onions, panko breadcrumbs, melted butter, and Parmesan cheese (if using). Stir until evenly coated. Sprinkle over the casserole without pressing down.

Notes

For a gluten-free version, use gluten-free all-purpose flour and gluten-free panko. For dairy-free, substitute butter with vegan butter and use unsweetened oat milk or cashew milk. The casserole can be assembled (without topping) up to 24 hours ahead and refrigerated; add topping and bake for 25-30 minutes. To keep topping crispy, add it just before baking and don’t stir it in. Leftovers keep in the refrigerator for up to 4 days; reheat in the oven to re-crisp the topping.
