  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon fine sea salt
  • 1/2 cup whole almonds, with skin on
  • 1 tablespoon milk
  • Red food coloring (gel or liquid)
  • Optional: 2 tablespoons raspberry jam

Instructions

  1. Cream the butter and sugar: In your mixing bowl, beat the softened butter and powdered sugar together on medium speed until light and fluffy — about 3-4 minutes. Scrape down the sides halfway through.
  2. Add the wet ingredients: Beat in the whole egg, then the egg yolk. Add the vanilla and almond extracts. Mix until just combined.
  3. Add the dry ingredients: In a separate bowl, whisk together the flour and salt. Gradually add this to the wet mixture, mixing on low speed. Stop as soon as the flour disappears.
  4. Chill the dough: Wrap the dough in plastic wrap and flatten it into a disk. Refrigerate for at least 30 minutes — 45 is better.
  5. Prepare the almonds: While the dough chills, cut your whole almonds in half crosswise. You want each half to look like a fingernail — rounded on one end, flat on the other.
  6. Shape the fingers: Preheat your oven to 325°F (160°C). Line your baking sheets with parchment. Take the chilled dough and scoop out tablespoon-sized portions. Roll each one into a log about 3 inches long. Gently taper one end to look like the tip of a finger. Place on the baking sheet. Using the back of a knife, press 2-3 lines into each finger to create knuckle creases.
  7. Attach the nails: Brush a tiny bit of milk onto the flat end of an almond half. Press it gently onto the tapered tip of the finger.
  8. Add the ‘blood’ detail: For the red at the nail base, dip a toothpick in red food coloring and paint a thin line where the almond meets the dough, or warm a tablespoon of raspberry jam and dab it at the base with your finger.
  9. Bake: Bake for 12-15 minutes, rotating the pan halfway through. The cookies should be set and just barely golden on the bottom.
  10. Cool completely: Let the cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack. Let them cool completely before moving them to a platter.

Don’t skip the chill time — it’s essential for the cookies to hold their shape. Use room temperature butter and an extra egg yolk for richness without spreading. Whole almonds with skin on give the most realistic nail appearance. The cookies are actually better on day two as the almond flavor mellows and blends with the butter.
